I'm going to cut to the chase. It is about 1,000 degrees outside and I'm not happy. Ok...1,000 degrees...100 degrees...it's basically the same. At this point, the usual summer high points like farmers markets, fresh fruit, and the fact that it stays light outside longer mean nothing to me. My only desire is to stay cool. Even my air conditioner is feeling the heat because it is 85 degrees in my room at the moment. Not exactly chilly. However, I'm thankful to have air conditioning at all! I'm also thankful for easy to make, icy treats like these popsicles. I found this recipe earlier this week and decided to give it a try. Due to the heat, both my physical and mental health were demanding a cold treat. These pops certainly did the trick!
Vanilla Yogurt & Strawberry Popsicles adapted from Bakers Royale
- 1 1/2 cups pureed strawberries
- 2 cups vanilla yogurt
I eliminated the crushed vanilla oreos from the recipe and it was still extremely tasty!
- Puree the strawberries. Add a layer of vanilla yogurt to your popsicle mold. Freeze for 30 minutes. Add a layer of strawberry puree. Freeze for 30 minutes. Add the last layer of yogurt and insert your popsicle sticks. Freeze.
Mmm. I love popsicles! I can think of so many fun combinations to try with this popsicle mold. My dad just texted me that he is bringing some fresh peaches home...peach pops next maybe? :)
What are some of your favorite popsicle recipes? I hope you are finding ways to survive this summer heat wave too.

The popsicle looks like it's got a face!

Haha! I think I see what you are talking about! Funny! ;)
DeleteI made so many popsicles last summer. I havne't even found my popsicle moulds yet this year. Sad. But this has gotten me inspired to either, find them or go get new ones.
ReplyDeleteThese look so refreshing, I wish I could say we were enjoying lots of heat but mostly it is really stuffy here in the UK x
ReplyDeleteHmm, looks yummy!!!!
ReplyDeleteOh, these are so yummy! I just made strawberry, mango, and watermelon popsicles! Perfect treats for the summer! xo Heather
ReplyDeleteWow! Those popsicle flavors sound so good! I definitely need to try a watermelon popsicle.
DeleteI just got out my popsicle molds! Yay for yummy homemade cool treats!
ReplyDeleteThat looks perfect for summer! x
ReplyDeleteI totally agree, anything over 100 degrees doesn't matter. Hot is hot is hot.
ReplyDeleteHelps to have a nice cool sweet treat though and these ought to do the job. I hope the brightened your (hot) day.
I definitely did. Thank you Erica! :)
DeleteYuck! 100 degrees! I am not looking forward to the 90+ degree heat that's coming our way (Ohio) this coming week. I can't really imagine 100 degrees. However, these popsicles look absolutely delicious. I want to make them myself!
ReplyDeleteWe love those! Have you tried mashed banana or pureed papaya? That's a great way to get new fruits in to the boys :-)
ReplyDeleteOoooh, these look delicious! I'm excited for warm weather! The only two things I don't like about summer are that 1) I'm suuuuper pale and sunburn within 10 minutes of going outside and 2)...sometimes it's too hot for my cats to want to snuggle. wahhhh. But anyway, the popsicles look tasty, and pretty, too!
